When you are broiling, the food is exposed to direct oven heat at very high temperatures, around 550°F (290°C). Meat, fish, fruit and vegetables can all be broiled. The food needs to be placed close to the broiler unit to be quickly cooked. In some ovens, this is on the top rack, in others it's on the bottom rack.
