Cooking instructions

1. Take 1 tbs of each spice, mix them together and rub them on the pork butt. Ideally, wrap the meat in plastic wrap and leave it in the fridge overnight for all the flavours to soak in.
2. Preheat your oven to 250° and place the pork butt with the fatty side up in a roasting pan on the wire rack. Depending on the size of the pork butt, leave the pork in the oven for 4 to 6 hours, uncovered, until the exterior is crisp and dry.
3. Take the pork butt out of the oven, wrap the whole thing in heavy-duty aluminum foil and put it back in the oven. Roast until the internal temperature of the pork is 200°F (93°C). Use a meat thermometer to be sure.
4. Remove the roasting pan from the oven and leave the pork butt to rest between 30 and 45 minutes before taking off the foil.
5. Shred the roast pork butt with a fork and mix th crisp and dry bits with the moist and tender pork parts. Pour some of your favorite suce on the pork and enjoy!
