Cooking instructions

1. Rinse the beef heart well and pat it dry with paper towel. Cut it open an remove any strings, arteries and blood vessels. Also remove the excess fat.
2. Cover the heart in balsamic vinegar and marinate overnight.
3. Pat the beef heart dry with paper towel and season with salt and pepper.
4. Melt a good amount of cooking fat in a frying pan and grill the beef heart for 5 minutes on each side, until golden brown.
5. Place the heart on a plate, cover loosely with tin foil and leave to rest for 15 minutes before carving. Slice against the grain and serve with your favorite vegetables.
