Cooking instructions

1. Wash the bundle of beet greens and cut the stems from the leaves.
2. Chop the leaves into small pieces and cut the stems into 1 inch chunks.
3. Pour 1 cup of water in a large pan and add the stems. Cover and simmer for 7 minutes. Drain the cooking liquid.
4. Add 1 crushed garlic clove, 1 tbs of olive oil and salt and pepper to taste. Squeeze half a lemon over the vegetables. Saute for a couple of minutes.
5. Remove the pan from the stovetop and add some butter. Serve warm.
