Cooking instructions

1. Preheat the oven to 375°F. Melt 1 tbs of butter with 6 crushed garlic cloves. Remove from heat and add 4 more tbs of butter and a pinch of salt.
2. Rub this mixture over the underside of the turkey breast and under the skin. Season the the rest of the turkey with salt and pepper to taste.
3. Roll the turkey breast and tighten with kitchen twine. Brush some more garlic butter on the roll.
4. Place the turkey breast in an oven dish and bake for 1 hour and 15 minutes. Check the internal temperature with a digital meat thermometer. It should read 160 to 165°F.
5. Remove the turkey from the oven and leave to rest for 10 minutes before cutting the twine and slicing the meat.
