Cooking instructions

1. Cut 1 large head of cauliflower into small florets and rinse them under cold water. Bring a pot of water to a boil and cook the florets for 6 minutes. Drain.
2. Spread the florets out on a kitchen towel and squeeze out all the excess water.
3. Place the florets in a food processor with 2/3 cup of flower and 1 tsp of salt. Pulse until you get a soft, sticky dough. If you don't have a food processor, work with your hands to form the dough.
4. Remove the dough from the food processor and lay it on a floured surface. Cut into 4 parts and roll each part into a long sausage. Cut into gnocchi.
5. Heat some oil in a non-stick skillet and cook the gnocchi until brown. Add a very small amount of water when the gnocchi are almost done. Add sauce and serve.
