Cooking instructions

1. Mix 1 egg, 3tbs of mayonnaise, 4 tsp of lemon juice, a pinch of chili flakes, 1 tsp of dried tarragon and 1 tbs of minced green onions.
2. Stir in 8 oz of crab meat without breaking up the meat too much.
3. Gradually stir in 0.5 cup of crushed crackers to form a thick mixture.
4. Form 4 patties. Heat 1 tbs of butter in a pan over medium heat.
5. Cook the patties in the pan for 5 to 6 minutes on each side until golden brown.
