1. Preheat the oven to 425°F.
2. Wash 1.5 lbs of fingerling potatoes and slice them in half lengthwise.
3. Toss the potatoes with 2 tbs of butter, 3 minced garlic cloves, 1 tbs of italian herbs mix, a pinch of salt and a pinch of pepper.
4. Add 1 tbs of olive oil to a large skillet and bake the potatoes for 20 to 25 minutes, until golden brown and crispy.
5. Garnish with fresh parsley and serve as a side for dinner.
