Cooking instructions

1. Make the marinade: combine 4 crushed garlic cloves, 1/4 cup ol olive oil, 1/4 cup of dry red wine, 2 tbs of mustard, 2 tbs of English sauce, 2 tbs of soy sauce, some fresh thyme, 1 tsp of chili flakes and 0.5 tsp of black pepper.
2. Place 2 lbs of top round or flank steak in a ziplock bag with the marinade and leave in the fridge for at least 12 hours. Turn the bag once. After marinating, leave the bag at room temperature for 2 hours.
3. Remove the steak from the bag and make criss-cross cuts in the meat on both sides.
4. Melt 2 tbs of butter and 1 tbs of olive oil in a skillet and sear the steak for 3 minutes on each side.
5. Tent the meat with tin foil and leave for 5 to 10 minutes, until the internal temperature reaches 130-135°F for medium rare doneness. Then place on a cutting board and allow to rest for 10 minutes. Meanwhile, reheat the marinade. Slice the meat and serve with the sauce.
