Cooking instructions

1. Leave the steaks at room temperature for 30 minutes before cooking.
2. Pat 2 steaks dry with paper towel, brush the steaks with olive and season them to taste with salt and freshly ground black pepper.
3. Place the steaks directly in a heated skillet. You should hear the sizzle.
4. Sear the steaks for 2 to 4 minutes on each side for medium rare doneness, or until the internal temperature reaches 130 to 135°F.
