Cooking instructions

1. Pour 6 cups of cold water in a large bowl. Add 1/3 cup of kosher salt and whisk. Submerge 4 pork chops in the water, cover and put in the fridge for up to 2 hours.
2. Preheat the grill for 20 minutes. Pat the pork chops dry with paper towel and season them to taste wiht 1 tsp of black pepper.
3. Place the pork chops on the hottest part of the grill, cover and grill about 3 minutes per side.
4. Transfer the pork chops to the coolest side of the grill and grill them for another 4 to 7 minutes, covered.
5. Allow the pork chops to rest for 5 minutes before serving.
