Cooking instructions

1. Preheat the oven to 400°F.
2. Cut a spaghetti squash lengthwise and remove all the seeds and ribbing. Brush the inside with olive oil and season with salt and freshly ground black pepper.
3. Place the two halves cut side down on a baking sheet and poke some holes in it with a fork.
4. Roast the squash for 30 to 40 minutes, depending on the desired tenderness.
5. Remove the squash from the oven and let it cool off slightly. With a fork, scrape the strands from the squash and serve as a side or in a salad.
