Cooking instructions

1. In a ziplock bag, combine 3/4 olive oil, 3/4 cup brown sugar, 1/4 cup red wine vinegar, 8 minced garlic cloves, 1.5 tbs Worcester sauce, 1 tbs salt, 2 tsp ground black pepper, 2 tsp chili flakes and 2 sprigs fresh rosemary.
2. Add a 1.5 lb beef top round roast to the bag and make sure all the air is pressed out. Marinate the meat for 2 hours in the fridge. If you have time, leave it overnight.
3. Preheat the grill to 450°. Take the meat out of the marinade and shake off any excess.
4. Sear the roast for 4 to 6 minutes per side, while flipping it regularly. The meat is ready when the internal temperature reaches 130 to 135°F for medium-rare doneness.
5. Transfer the beef to a cutting board, tent loosely with aluminum foil and let rest for 10 minutes before slicing.
