Cooking instructions

1. Make the marinade in a ziplock bag: combine 1 tsp dried thyme, 1 tsp dried basil, 1 tsp dried marjoram, 1 tsp mustard powder, some salt and pepper and 1/3 cup red wine. Add a 1.5 beef tri tip roast to the bag and marinate in the fridge for at least 1 hour.
2. Preheat the oven to 450°F. Coat the bottom of a roasting pan with olive oil.
3. Take the meat out of the bag and discard the marinade. Shake off any excess and place the roast in the roasting pan.
4. Roast the meat for 15 minutes. Lower the temperature to 350°F and roast for 20 to 25 extra minutes until the center is slightly pink. The meat is ready when the internal temperature has reached 140°F.
5. Allow the roast to rest for 10 minutes before slicing.
