Cooking instructions

1. Preheat the oven to 350°F.
2. Wash 5 lbs turkey necks and pat them dry with paper towel. Season to taste with salt and Cajun seasoning.
3. Heat 2 tbs vegetable oil in a cast iron skillet and sear the turkey necks on both sides, for 8 minutes. Reserve on a plate.
4. Add another 2 tbs vegetable oil to the skillet and sauté 0.5 chopped onion and 4 minced garlic cloves. Add 29 oz chicken broth. Add the turkey necks to the broth and place the lid on the skillet.
5. Transfer the skillet to the oven and cook the turkey necks for a maximum 2 hours. Serve with rice or mashed potatoes and some of the cooking juice.
