1. Cut the andouille sausage in half lenghtwise.
2. If you prefer, you can cut them into 0.5 inch slices. Season with extra salt and pepper to taste.
3. Heat some oil in a non-stick frying pan over medium heat.
4. When the oil is hot, cook the andouille sausages for 6 to 9 minutes, according to taste.
