Cooking instructions

1. Leave a 2 to 3 pound roast at room temperature for at least 45 minutes before cooking. Preheat the oven to 500°F.
2. Prepare the dry rub : mix 1 tsp of salt with 1 tsp of dry rosemary, 1 tsp of dry thyme, 0.5 tsp of paprika powder, a pinch of black pepper, a pinch of garlic powder and a pinch of onion powder.
3. Pat the roast dry with paper towel, rub it completely with olive oil and coat it with the seasoning mix.
4. Place the meat on a rack in a roasting pan with the fat side up. Roast for 15 minutes. Reduce the temperature to 300°F and roast for another 40 to 50 minutes.
5. The roast is ready when the internal temperature reaches 130-135°F. Remove the roast from the oven, tent with tin foil and leave to rest for 15 minutes before carving it against the grain.
