1. Preheat the oven to 275°F.
2. Remove the membrane from the back of the ribs with a sharp knife.
3. Rub salt and pepper on both sides of the ribs and place them meat-side up into a roasting pan.
4. Cover the roasting pan with aluminum foil and roast the ribs for 3 to 4 hours, until the meat falls from the bones.
5. Remove the ribs from the oven, take off the foil and brush both sides with barbecue sauce if desired.
