Cooking instructions

1. Season 2 mackerel fillets to taste with salt and pepper.
2. Heat 1 tbs olive oil in a non-stick frying pan.
3. Add the mackerel fillets skin-side down to the pan and coof on medium high heat.
4. Fry the fish for 2 to 4 minutes. Push the fish down so that the complete surface touches the pan. The fish is ready when the skin is crispy and golden
5. Remove the pan from the stovetop and leave the fish to cook through in the residual heat of the pan. Serve warm.
