1. Dry the pork chops with paper towel and season them to taste with salt, freshly ground pepper and italian herbs.
2. Heat some olive oil in a cast-iron skillet.
3. Seat the pork chops for about 3 to 5 minutes on each side, until they are golden brown.
4. Use a meat thermometer to check if the pork chops are well-cooked. They are done at 135°F.
5. Leave the pork chops to rest for 10 minutes before serving.
