Cooking instructions

1. Prepare the seasoning by mixing all the dry ingredients and rub them generously on the brisket. Wrap the brisket in aluminum foil and leave it in the fridge overnight.
2. Take the brisket out of the fridge one hour before preparing it, take off the wrapping and let the meat rest at room temperature.
3. Preheat the oven at 300°F and place a rack in the roasting pan. Cover the rack with tin foil to cover the brisket later on.
4. Bake the brisket for 1 hour and 15 minutes per pound of meat, until it reaches 185°. Check the temperature with a meat thermometer.
5. Take off the foil and bake for another 45 minutes or more until the internal temperature of the meat is 200°. After taking the brisket out of the oven, cover it loosely with foil and leave to rest for half an hour.
