Cooking instructions

1. Preheat the oven to 425°F. Remove the goose from the packaging and leave it at room temperature 1 hour before cooking.
2. Pat the goose dry with paper towel and rub it completely with salt. Remove the two lobes of fat from the cavity. Pierce the skin all over, also under the wings, and place the goose in a roasting tin, breast-side down.
3. Half fill the cavity with spices and herbs to your liking. Add some carrots and onions under the goose.
4. Roast the goose for 20 to 30 minutes at 425°F. Lower the temperature to 340°F and bake for 15 minutes more per pound. Every 30 minutes, baste the goose with the cooking juices.
5. Pierce the fattest part of the goose with a sharp knife. It is done when the juices run clear. Flip the goose and brown it at 425°F again for 20 minutes, until the breast side is golden brown. Leave to rest for 1 hour before serving.
