1. Preheat the water bath of the slow cooker to 143°F.
2. Season a 3 bone pork rack with salt. Place it in a vacuum bag and add 2 tbs olive oil.
3. Transfer the vacuum sealed bag to the slow cooker and cook for 90 minutes.
4. Take the pork rack out of the bag and pat it dry with paper towel.
5. Heat a bit of vegetable oil in a skillet and sear the pork rack on all sides for a few minutes. Allow to rest for 5 minutes before serving.
