Cooking instructions

1. Cut off any silverskin from 2 pork rib racks. Generously apply dry rub on both sides of the ribs.
2. Wrap the ribs tightly with 2 or 3 layers of aluminum foil without piercing it.
3. Grill the ribs for 1 hour over direct heat. Turn the ribs twice during cooking.
4. Remove the ribs from the grill and leave to rest for 10 minutes. Then, remove the foil and discard the liquid that has accumulated. Return the ribs to the grill, bone side down, and baste the top with BBQ sauce. Cover the grill and cook for another 10 to 12 minutes. Baste after 5 minutes.
5. Allow the ribs to rest for 5 minutes before serving with more BBQ sauce and a salad.
