1. Wash 1 lb of purple potatoes. Place them in a saucepan.
2. Fill the pan with water, add a pinch of salt and bring to a boil.
3. When the water is boiling, lower the heat and let the potatoes simmer for 20 to 25 minutes.
4. Drain the potatoes. Slice them up or cut them into cubes.
5. Add 1 tsp of salt and some olive oil. Serve with olives.
