Cooking instructions

1. Prepare the grill for indirect cooking. Place a drip pan under it with 1 inch of water. Heat the grill to 250°F.
2. Remove the silver skin from 1 rack of baby ribs and season it well with dry rub.
3. Place the ribs over the drip pan and smoke the ribs for 30 to 60 minutes. From there cook the ribs for 3 hours.
4. The internal temperature of the meat should read around 200°F.
5. Allow the ribs to rest for 10 minutes under foil before serving.
