Cooking instructions

1. Coat 2 to 3 racks of baby back ribs with dry rub and wrap them in several layers of aluminum foil.
2. Preheat a grill to medium heat. Cover the grill and cook the ribs for 1 hour over direct heat. Flip the ribs twice during cooking.
3. Remove the ribs from the grill, take off the foil and leave to rest for 10 minutes.
4. Place the ribs back on the grill, bone-side down and baste the top of the ribs with BBQ sauce.
5. Cook the ribs covered for 10 to 12 minutes until charred. Flip the ribs twice. Leave to rest for 5 minutes before serving.
