1. Remove the greens from 6 medium beets. Scrub the beets clean.

2. Fill a saucepan with water, add the beets and bring to a boil.

3. When the water is boiling, reduce it to a simmer.

4. Cook the beets for 30 to 45 minutes, until tender.

5. Once the beets have cooled down enough, peel away the skin and rinse them under cold water.
