Cooking instructions

1. Allow a 5 lbs standing rib roast to reach room temperature for 30 minutes to an hour. Preheat the oven to 465°F.
2. Pat the meat dry with paper towel. Rub the rib roast generously with salt and pepper. Place it in an oven dish, fat-side up. Garnish with fresh rosemary.
3. Roast the rib for 30 minutes. Lower the heat to 350°F and roast for 15 minutes per pound for medium rare doneness.
4. Remove the rib roast from the oven and cover it with aluminum foil.
5. Allow to rest for 20 minutes before serving.
