Cooking instructions

1. Preheat the oven to 356°F.
2. Prepare the dry rub: crush together 4 chopped garlic cloves, 3 fresh rosemary sprigs, 3 fresh thyme sprigs, 1 tbs salt, 1 tsp black peppercorns and 2 tbs olive oil.
3. Rub a 3 lbs round roast with this mixutre and let it marinade for 30 minutes. Meanwile, heat 2 tbs olive oil in a skillet and sear the beef on all sides for 1 to 2 minutes.
4. Roast the beef for 65 minutes.
5. Allow the meat to rest for 20 minutes under aluminum foil for 20 minutes before carving.
