Cooking instructions

1. Prepare the marinade in a ziplock bag. Combine 0.5 cup of rapeseed oil with 1 tbs of crushed juniper berries, 1 tbs of chopped thyme and some salt and pepper. Place 4 pheasant breasts in the bag and leave to marinate overnight.
2. Preheat the oven to 375°F. Remove the pheasant breast from the marinade.
3. Add some vegetable oil to a hot frying pan and fry the pheasant breasts skin-side down, until golden brown.
4. Transfer the pheasant breasts to a lined baking sheet and roast for 5 to 6 minutes.
5. Allow to rest for 5 minutes before serving. Serve with parsnips or Brussels sprouts.
