Cooking instructions

1. Remove the pork shoulder from the refridgerator 30 minutes before cooking. Pat it dry with paper towel.
2. Preheat the oven to 425°F. Score the skin of the pork shoulder with a sharp knife and season it with salt and pepper.
3. Place the pork shoulder in a roasting dish and roast for 25 minutes. Reduce the heat to 350°F and roast for 30 minutes per 0.5 lb of meat.
4. Add 4 to 5 halved apples and 6 halved shallots to the dish 45 minutes before the end of the cooking time. Baste them with cooking juices.
5. The pork shoulder is ready when the juices run clear. Allow the meat to rest for 15 minutes on a place and cover it with foil.
