1. Wash 2 lbs of potatoes thorougly if you're leaving the skin on. Otherwise peel the potatoes. If you are large potatoes, cut them in quarters.
2. Place the potatoes in a large pot and cover them completely with water. Bring to a boil.
3. Add 0.5 tsp of salt.
4. Boil the potatoes for 12 to 15 minutes. Use a fork to check for tenderness.
5. Drain the water. Toss the potatoes with some vegetable oil or butter and season to taste with salt and pepper.
