Cooking instructions

1. Preheat the oven to 350°. Slice the shallot and garlic, wash and chop the potatoes and the broccoli. Set aside.
2. Pat the chuck roast dry and rub it with salt and pepper.
3. Put some olive oil in a cast-iron skillet and put it on medium heat on the stove. Sear the meat on both sides until the outside is crisp and brown. Remove the meat from the skillet.
4. Saute the onion and garlic in the skillet, add red wine and chicken broth and heat for a couple of minutes. Return the chuck roast to the skillet. Cover the meat with a lid or foil and place it in the oven.
5. Let the chuck roast bake for 2.5 to 3 hours until tender. Baste the meat with its juices a couple of times.
