Cooking instructions

1. Preheat the oven to 250°F. Place a 3 to 4 lbs corned beef brisket in a large pot and add 2 bay leaves.
2. Cover the beef brisket completely with water and bring to a boil. Reduce the heat and cover.
3. Simmer the beef brisket for 45 to 50 minutes per pound. This will take 2.5 to 3.5 hours.
4. When the beef is tender, remove it from the pot, cover it with foil and reserve in the preheated oven. Bring the cooking water back to a boil and add 1.5 lb of baby potatoes and a couple of large chopped carrots.
5. Cook the vegetables for 20 to 30 minutes. Drain the vegetables and toss with butter. Serve with the carved meat.
