Cooking instructions

1. Mix 2 tbs of English sauce with 2 tbs of mustard, 2 tbs of red wine vinegar, 1 tbs of honey, 1 tsp of italian herbs, 1 tsp of salt and 1 tsp of pepper in a ziplock bag.
2. Place the meat in the bag with the marinade and leave in the fridge for at least 2 hours. If you have the time, leave it overnight.
3. Preheat the oven to 450°F. Remove the meat from the marinade and pat it dry with paper towel. Season the meat with some more salt and pepper.
4. Roast the eye of round for 15 minutes at 450°F. Then reduce the temperature to 325°F and roast for about 70 minutes for medium rare preparation.
5. Remove the roast from the oven, cover loosely with fin foil and leave to rest for 10 minutes before carving against the grain.
