Beef Bottom Round Roast

1. Preheat the oven to 500°F. Pat the meat dry.
2. Mix 1/4 cup of butter with 1 tbs of rosemary and 1 tbs of crushed garlic. Coat the meat evenly.
3. Place the roast in a cast-iron skillet and reduce the temperature to 475°F.
4. Roast for 7 minutes per pound of meat. Turn off the oven and leave the meat inside for 1 hour.
5. Turn the oven back on to 200°F and roast for another hour.
